2-3 large ripe tomatoes-coarsely chopped
1 Tablespoon olive oil
½ cup chopped sweet onion
¼ cup chopped parsley
1 jalapeno-seeded and finely chopped (do not use the seeds)
2-3 cloves garlic cloves-chopped
½ cup chopped green pepper
½ cup chopped red pepper
Lemon juice and cumin seed- season with reason
Mix all the ingredients in a food processor for a few seconds. You want this salsa chunky. Chill. Serve with chips, vegetables, poultry, or seafood.
